Tuna meets the eye

What you got in the eye is the only truth you’ll find. 

That’s why a good presentation on a plate makes you feel that you’re eating something amazing even when there could be some improvement left to do. 

For instance this tuna fish tartare had way too much cilantro but the way they plated it up made me forget about the excess of herbs (and the fact that here is Sint Maarten they put it everywhere and call it a different way every different culture they want the dish to be…)

I’d  like this year to learn how to plate up food to make it taste even better… in the kitchen and in life it’s no more a question of aesthetics, it’s a matter of finesse.
